SALMON “AL PASTOR” TACOS

The seasoning for these tacos is not technically the traditional “al pastor,” which involves some time and labor to prepare. Instead, this is a quick and easy recipe reminiscent of “al pastor” flavors.


Serves 4

INGREDIENTS

  • 4, 4oz salmon fillets or 1, 1lb fillet, preferably wild

  • 3 cloves garlic, chopped

  • 2 tablespoons smoked paprika

  • 1/2 cup of olive oil

  • Salt & pepper

Preheat the oven to 300 degrees.

In a small bowl combine the garlic, smoked paprika and olive oil. Set 2 tablespoons aside.

Put the salmon fillet(s) in a shallow dish and season generously with salt pepper. Coat with the paprika/garlic/oil mixture. Marinate for at least 30 minutes or do this in the morning, and leave marinating in the refrigerator until ready to prepare.

On a baking sheet lined with parchment paper, spoon the reserved mixture in the middle. Place the fillets with their marinade on top. Bake for about 20 minutes or until the salmon is tender.

Once out of the oven, remove the skin and flake the salmon with a fork. Serve over tortillas with garnishes such as shredded cabbage or chopped cilantro, avocado, radishes, and salsa (pictured here with cabbage slaw and tahini sauce).
