Arriving at the pinnacle of all the growth of spring and summer is harvest season. The abundance of summer carries on with colorful vegetables and fruits, but as the season moves along, the energy of plants moves down into the roots. Root vegetables and herbs are concentrated with minerals and vitamins, deeply nourishing our bodies and warming us from the inside as we transition into cooler temperatures.
